Food Sensitivities have been found to be the result of a weakened immune system’s learned response to any number of proteins that are permeating or “leaking” into the systemic circulation from the gastrointestinal tract. Once these proteins are identified, immune modification can proceed by temporarily removing the food or chemical trigger and re-educating the immune system to respond to these proteins in a less reactive manner.

MTHFR
MTHFR is an enzyme responsible for converting 5,10-methylenetetrahydrofolate to the product 5-methyltetrahydrofolate – it is involved in the metabolism of folate and homocysteine. The product of the reaction catalyzed by MTHFR converts homocysteine (a potentially toxic amino acid) to methionine (a useful and necessary amino acid). Many people’s MTHFR is defective meaning they have one or two single nucleotide polymorphism or “SNPs” on it. When that is the case, synthetic folic acid that may be in a nutritional supplement they take may not work well. The natural type of folate is what the body recognizes either through consuming more leafy green vegetables, and in many cases a pharmaceutical grade folate supplement.
MTHFR SNPs can cause hyperhomocysteinemia (especially if folate levels are low); affect nervous system, behavioral, and vascular health; contribute to birth defects, miscarriage, and preeclampsia; modulate cancer risk; and increase chronic disease risk.
